Guila Sandroussy

Tuna patties are a different way to serve canned tuna besides for the usual tuna sandwich. It's a lunch option for those lunches, or a yummy appetizer for a holiday lunch. Plus, they’ve got some hidden veggies in there to pack them with more nutrients!

patties with sauce

  • 3 cans tuna, drained

  • 1 zucchini, peeled and grated

  • 1 carrot, peeled and grated

  • 1 potato, peeled and grated

  • 1 shallot, minced (i used a microplane)

  • 2 green onions, minced

  • 2 eggs

  • 1/2 cup matsa meal (or breadcrumbs)

  • 2 tbsp mayo

  • 1 tsp dijon

  • 1/2 lemon, juiced

  • Salt and pepper

  • 1/2 tsp garlic powder

DIRECTIONS:

  1. Combine all ingredients in a medium size mixing bowl. Mix until well combined. If the mixture is too thin, add some more matsa meal.

  2. Form patties and set aside.

  3. Heat oil in a non-stick pan over medium heat.

  4. Start placing your patties in the pan. Flip after a few minutes, or until a nice golden color has formed.

  5. Repeat for all patties!
