Tuna patties are a different way to serve canned tuna besides for the usual tuna sandwich. It's a lunch option for those lunches, or a yummy appetizer for a holiday lunch. Plus, they’ve got some hidden veggies in there to pack them with more nutrients!
3 cans tuna, drained
1 zucchini, peeled and grated
1 carrot, peeled and grated
1 potato, peeled and grated
1 shallot, minced (i used a microplane)
2 green onions, minced
2 eggs
1/2 cup matsa meal (or breadcrumbs)
2 tbsp mayo
1 tsp dijon
1/2 lemon, juiced
Salt and pepper
1/2 tsp garlic powder
DIRECTIONS:
Combine all ingredients in a medium size mixing bowl. Mix until well combined. If the mixture is too thin, add some more matsa meal.
Form patties and set aside.
Heat oil in a non-stick pan over medium heat.
Start placing your patties in the pan. Flip after a few minutes, or until a nice golden color has formed.
Repeat for all patties!

In a blender combine:
2 roma tomato
1/2 cup balsamic vinegar
1 cup olive oil
1 ounce water
2 green onions
Salt and pepper
