Tuna Pasta Salad

This tuna pasta salad was not planned for at all.


To be honest, i was dreaming about it for days before i got myself to make it, because if you’re anything like me, I don’t like getting my kitchen dirty making food just for me. Because honestly, none of my kids would even look at this.


But i got to a point where I was dreaming about it too much so I made it and OMG.


Exactly what I needed!



tuna pasta



  • 2 cups raw pasta of your choice

  • 2 garlic cloves, minced

  • 2 tbsp oil

  • 3/4 cup sliced kalamata olives

  • 2 tsp capers

  • 1/2 zucchini, diced

  • 1 can tuna

  • 1/4 tsp oregano

  • 1/2 lemon, juiced

  • Sprinkle crushed red pepper flakes

  • Salt and pepper, to taste



DIRECTIONS:


  1. Boil pasta according to package directions.

  2. In a small pan, heat oil to medium high heat. Add garlic and fry until fragrant. Add zucchini, capers and kalamata olives. Fry until zucchini slightly softens.

  3. Mix in spices and lemon. Remove from heat. Add flaked tuna. Mix in with pasta. Adjust salt level.
