Tu bishvat Date Bark

Trends are not my thing.
I pretty much never bite the bullet. But this one… this one is different.
I love how easy and so quick these come together. Literally the longest part is checking the dates.
So in honor of TU BISHVAT (the new year of the trees), I whipped up a batch of them with a few dried fruits to keep it festive.
Let me tell you… they will stay hidden in my freezer and become my new guilty pleasure.

36 dates, pitted
1 cup almond butter
150g good quality chocolate
Dried fruit, for topping (i used dried pineapple, craisins and apricots)
Flaky salt, for topping
DIRECTIONS:
Start by laying your dates opened on a baking sheet lined with parchment paper. Create a square shape.
Place another parchement paper on top and carefully flatten the dates using a rolling pin. Carefully remove top parment paper.
Melt your almond butter in a microwave safe bowl for about a minute, then spread all over your dates.
Melt your chocolate in a microwave safw bowl with increments of 30 seconds, making sure to mix in between to aboid burning the chocolate. Spread all over the almond butter.
Top with chopped dried fruit of choice. Finish off with flaky salt.
Place in the freezer until set.
Remove and cut squares.
