Tomato Carpaccio

This is on repeat around here for Shabbat lunch and it’s a great addition to your Shavuot lunches as well. It’s bright, punched with flavors and gorgeous to look at. It will add a touch of gourmet to your table, while being so easy to put together!


Why make a tomato salad when you can make a carpaccio!

This is my train of thought, always!

  • 2-3 large tomatoes (any specialty tomato that is large will do. Use different colors if you find too!

  • 1 shallot

  • Capres

  • Marinated jalapenos (or just fresh sliced thin)

  • Black olive paste (or minced kalamata)

  • Chopped basil

  • Olive oil

  • Balsamic glaze

  • Salt

  • Pepper



DIRECTIONS:


  1. Slice tomatoes using a mandolin to get thin, even slices. Slice also the shallot.

  2. Place tomatoes on a large flat plate. Top with all the toppings.



You can add anything you would like on your tomotoes as well. I have served it so many different ways. With fresh mozzarella, or feta, or fresh burrata (if you can find) is amazing as well.
