Toasted Vermicelli Soup

Some foods are just nostalgic. It can be the simplest dishes or the most complex ones. It’s the aromas and the tastes that feel like i am being transported back to my childhood.


My mother makes this “soupe de vermicelles” (vermicelli soup) for as long as I can remember. Sometimes she adds small pieces of chicken from the broth, sometimes no.


The combination of the toasted pastas (do not skip that step!) with the comforting chicken broth is something no child can resist. It gives off an aroma in the house that will pull everyone in for a taste!

  • 1 box soup noodles (375g)

  • 8 cups chicken broth

  • 1 tsp salt



DIRECTIONS:


  1. Start by heating a pan or a pot to medium high heat. Throw all your soup noodles in the pan and continuously mix to create the toasted effect. Do not let it burn.

  2. Once it reaches a nice color add broth and salt. Mix the noodles

  3. Let it reach a slow boil, then lower the flame to a low heat and cover the pan.

  4. Let it simmer for five minutes, then uncover and mix.
