I cannot get enough of this one.
That sauce is just on another level!
You need to try it. It is one of the best fish I've had in my life!
Sauce:
3 tbsp oil
3 cubes frozen garlic
1/2 cup honey
1 tbsp sriracha
1/2 tsp black pepper
1 tsp salt
1 tsp cornstarch mixed with 1/4 cup water
Fish:
600g cod
2 eggs
Pinch of salt
1/2 cup flour
1/2 cup breadcrumbs
1 tsp cornstarch
Oil
DIRECTIONS:
Start with your sauce: Heat a pan to medium high heat. Add oil and cubed garlic. Once fragrant, add honey, and bring down your heat to medium low. Add Sriracha, salt, pepper, and cornstarch mixture. Let it simmer on low.
Coating fish: dry the fish very very well. Prepare two bowls, one with egg, salt and a tablespoon of the sauce mixture. The other bowl with breadcrumbs, flour, and cornstarch.
Dip your fish in the egg mixture and then the breadcrumb mixture. Repeat for all.
Heat a pot of 2 inches of oil at 350F. Fry your fish and batches. Transfer to your pan with the simmering sauce.
