This is the meat you are missing in your life! If you have never tried veal ribs, what are you waiting for???
It's everything that beef ribs give you, moist, tender, flavorful - but 100x better. I cant even begin to say how easy and quick this recipe comes together. It does require some oven time, but as long as its cooking, you’re done prepping it! If you are dreaming of these sticky asian bones, GO MAKE THIS ASAP!
5 veal ribs
Kosher salt
Oil, just enough to coat your pan
2 small onions (or 1 large), sliced
2 garlic cloves, sliced
1/4 cup white wine
2 tbsp honey
1/4 cup apricot jam
2 1/2 tbsp hoisin
1 tbsp silan
DIRECTIONS:
Preheat oven at 300F.
Start by rubbing all sides of your ribs with salt. Heat oil at medium high in an enameled cast iron dutch oven (or an oven proof pan). Sear ribs on all sides, then remove and set aside
Add onions and scrape remaining of the meat. Saute until translucent. Add garlic and saute until fragrant. Add wine, apricot jam, honey.
Lower heat to a low flame. Push mixture to the side and add back your ribs. Return sauce on meat.
Cover and place in oven for 1.5 hours.
Prepare mixture of silan and hoisin. Uncover meat and brush mixture on every side of the ribs. Return to oven for 10 minutes, uncovered, until sauce becomes sticky and bubbly.
Enjoy,
Guila
