Stuffed Onions

This is one of the best food ever.


Just imagine a soft juicy onion paired with hearty meat and rice, all seasoned with sweet and savoury marinade. Imagine that going on in your mouth...


I know, WILD!!!!

  • 3-4 large onions


Meat mixture:


  • 1 lb ground beef

  • 1 cup partially cooked basmati rice (details in directions)

  • 1/2 shallot

  • 1/4 cup chopped cilantro, packed

  • 1/2 onion, fried

  • 1 tsp paprika, 1/2 tsp cumin, 1/2 tsp garlic powder, pinch of allspice, salt and pepper


Sauce:


  • 2 tbsp silan

  • 2 tbsp apricot jam

  • 2 tsp oil

  • 2 garlic cloves, minced

  • 1/2 lemon, juiced

  • Handful of chopped cilantro

  • Paprika, cumin, salt, pepper



DIRECTIONS:


  1. Start by frying your onion in a pan. In a separate saucepan, cook 3/4 cup of basmati rice in 1 cup of water so it can cook half way.

  2. Clean your onions. Make a slit going from one side to the middle of the onion. In a medium size pot, immerse them in water. Boil for about 20-30 min, or until they become soft. Drain and let them cool.

  3. Mix together your meat mixture.

  4. Fill onions: carefully separate each layer of the onions, making sure not to tear the layers. Place about 1-2 tbsp of the meat mixture inside the onion and roll to close.

  5. Place all the stuffed onions in a oven safe baking dish. Whisk together the sauce and pour all over the onions. Add 1/2 cup of water.

  6. Cover the dish and cook at 350 F for about 1.5 hour, then an extra 20 min uncovered.
