Split Pea Soup

The arctic cold weather doesn’t seem to be leaving us anytime soon. So might as well, enjoy the foods that hug you and make you feel warm on the inside!!

  • 1 large onion, diced

  • 2 tbsp oil

  • 3 carrots, diced

  • 2 potatoes, diced

  • 2 cup split peas

  • 2 cubes frozen garlic

  • 4 cubes frozen cilantro

  • 32 oz vegetarian chicken broth (i use imagine)

  • 3 cups water

  • 1 tbsp salt

  • 1/2 tsp black pepper

  • 1 tsp turmeric



DIRECTIONS:


  1. Heat your instant pot (or regular pot). Add oil and onion. Saute until translucent. Add carrot and saute until brown bits start to form.

  2. Add potatoes, frozen cilantro and garlic. Saute until cubes thaw and become fragrant.

  3. Add broth, water and spices.

  4. For instant pot: pressure cook for 40 minutes. For regular pot: simmer covered for 1-1.5 hour.

  5. Once cooked, blend with immersion blender until desired consistency is reached.
