Spinach Leek Salmon Rolls

A new and fun way to serve salmon for your holiday menus. So easy to make and so pretty looking!

  • 3 tbsp oil

  • 1 yellow onion, diced

  • 1 bag frozen spinach

  • 4 cups finely chopped leeks

  • 1/2 large salmon filet

  • Wooden toothpicks


Sauce:


  • 1 lemon, juiced

  • 3 tbsp olive oil

  • 6 cloves garlic, minced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp paprika

  • 1 tsp dried parsley



DIRECTIONS:


  1. Preheat oven to 425 F.

  2. Start by heating a pot at medium high heat. Add oil then add onion. Saute until translucent. Add spinach and leek and lower heat to simmer. Let it reduce until no more liquid.

  3. Slice very skinny slices of salmon and place sideways. Fill with spinach mixture and roll up. Stick a toothpick to secure the roll.

  4. Place in a baking dish. In a small mixing bowl, mix sauce ingredients. Brush on every salmon roll.

  5. Bake for 16 minutes uncovered.
