I always loved burgers. Any burger, as long as they’re juicy and flavorful. I always found them to be super versatile when it comes to adding (hiding) veggies and more nutrients all packed in a protein.
I made those spinach chicken burgers for dinner in tiny versions and they were a hit with my kids. They did not want to try them at first but after a while, they did and even asked for more! This doesn’t happen often, but when it does, its super gratifying!
1 lb ground chicken
5 cubes frozen chopped spinach, thawed in a microwave (i used fresh that i steamed, chopped and froze, but u can definitely use store bought)
3/4 cup breadcrumbs, or more if your burgers are too soft to form
1 egg
1/2 tsp garlic powder
1 tsp paprika
1/2 tsp cumin
1/2 tsp onion powder
Salt and pepper
Neutral oil, for frying
DIRECTIONS:
Combine all ingredients in a mixing bowl, aside for the oil. Mix to incorporate.
Heat a pan on medium low heat for a few minutes (You can use a grilling pan to get grill marks but totally optional). Add about 2 tbsp of oil.
Form patties using your hands, and shape according to the diameter of your burger bun.
Fry on one side for about 3-4 minutes, then flip and fry another 2-3 minutes until the sides are white (cooked) but still juicy.
Top with fried onions and/or toppings of your choice!
