Sheetpan Miso Salmon and Veggies

One pan dinners or lunches are just the right way to enjoy a burst of flavors and freshness, without really working for it.


Add whichever veggies you prefer to your pan and roast them with salmon and you’ve got yourself such a good healthy meal in just a few minutes of prep!




sheetpan dinner



  • 2 sweet potatoes

  • 1 zucchini

  • 2 salmon slices

  • Salt and pepper



Miso topping:


  • 2 tbsp miso

  • 2 tbsp apricot jam

  • 1 tsp sriracha

  • 1 tbsp maple syrup



DIRECTIONS:


  1. Preheat oven to 425 F.

  2. Spray a sheetpan with non stick and prepare your veggies in sticks. Try not to vary thickness so they can cook evenly.

  3. Spread veggies on pan, leaving the middle reserved for the salmon.

  4. Brush topping all over and sprinkle salt and pepper. Bake for 20 minutes.

  5. Add salmon slices to the middle of the pan and brush remaining miso dressing on them. Sprinkle salt and pepper on salmon. Bake for 16 minutes and an additional 2 minutes on high broil.
