Sheetpan Dill Salmon with Broccoli and Potatoes

Sheetpan dinners are one of the easiest for a reason.


They happen all on one pan, so it reduces dishes and they can be prepped in minutes.


Here is a super easy way to serve a healthy salmon dinner ( and to make extra leftovers for your next day lunch, just add more salmon!) that you will love making!



dill salmon


Vegetables:


  • 1 bag frozen Broccoli

  • 1 sweet potato, cubed

  • 3 red potatoes, cubed

  • 1/4 tsp Oregano

  • 1/2 tsp Garlic powder

  • 1 tsp Salt

  • 1/3 tsp Pepper

  • Non stick cooking spray



Salmon:


  • 3 slices salmon

  • 2 tbsp fresh dill, chopped and packed

  • 1/2 Lemon, juiced

  • 1/2 tsp Salt

  • Sprinkle of Pepper

  • 1 clove garlic, minced

  • Non stick cooking spray



DIRECTIONS:


  1. Preheat oven to 400 F. On a full size sheetpan, place broccoli on one side and potatoes on the other side. Toss them with the seasonings. Spray generously with non stick spray.

  2. Bake in oven for 30 minutes.

  3. While the vegetables are roasting, marinate your salmon in all the seasonings.

  4. Remove sheetpan from oven. Place salmon in between both vegetables and spray it with non stick spray. Return the sheetpan to the oven for an additional 15-17 minutes.
