Semolina cake

The typical grandmother cake, and it takes just a few minutes to put together. One bowl, two cakes. Can’t get better than this!


If you never tried a semolina based cake, do yourself a favor and try that one!


Recipe comes from my mother’s friend.

Yields 2x 9” cakes


Cake:


  • 1/4 cup orange blossom water

  • 3 eggs

  • 1 cup sugar

  • 3/4 cup oil

  • 1 belsoy cream

  • 3/4 cup shredded coconut

  • 1 1/2 cup semolina (Number 1)

  • 2 tsp baking powder


Extras:


  • Oil spray

  • 250g Apricot jam

  • Shredded coconut



DIRECTIONS:


  1. Preheat oven to 350 F. Coat two 9” tart pans with oil spray.

  2. Combine all cake ingredients in this order in the bowl of an electric mixer. Mix until fully combined.

  3. Transfer to both pans. Bake for 25-30 minutes, or until fully set. It will slightly brown around.

  4. As soon as they come out of the oven, spread half of your apricot jam on each cake. Decorate with more shredded coconut.
