Here is a recipe that is a One-pot situation and that will keep menus simple, while still including those key Rosh Hashana ingredients.
3 yellow onions, sliced very thin
1/4 cup oil
6 small potatoes, peeled and sliced
1/3 cup dried apricots, checked and roughly chopped
12 chicken drumsticks, or any bone in chicken pieces
1/2 lemon, juiced
1/3 cup pomegranate syrup
Salt, to taste
DIRECTIONS:
Preheat oven to 350 F.
Start by heating an oven safe braiser at medium heat. Add oil. Add onions and caramelize until very soft and brown.
Add potatoes and apricots and cook down for a few minutes. Add lemon, pomegranate syrup and salt.
Place the chicken drumsticks in the sauce, add about 1/2 cup of water, or enough to cover about 1/2 of the chicken pieces.
Cover braiser and place in the oven for 1 hour. Uncover and bake another 30-40 minutes.
