Hearty and comforting chicken meatballs.
I know that’s all you need during the cold months ahead. Dishes that reheat very well and that hit the spot every time!
Chicken mixture:
1 kg minced chicken (dark)
1/2 cup cilantro, chopped
1 small onion
1 small potato, peeled
1 cup breadcrumbs
1 egg
1/2 tbsp paprika
1/2 tbsp salt
1 tsp garlic
1 tsp turmeric
Sauce:
1/4 cup oil
1 onion, sliced
2 tomatoes, diced
4 garlic cloves, sliced
1 tbsp tomato paste
1/2 tbsp paprika
1 tsp pepper
400 ml tomato sauce
1/2 tbsp salt
1/2 lemon, juiced
1/2 tbsp sugar
800 ml water
DIRECTIONS:
Start with your chicken mixture. Blend the onion and potato until puréed. Mix all ingredients together in a bowl.
In a large braiser or Dutch oven, heat oil to medium high. Add sliced onions and sauté until soft.
Add tomato and garlic and sauté until fragrant. Reduce heat to medium low. Add the rest of the ingredients.
Once mixture comes to a soft boil, reduce heat to simmer. Form meatballs and add them to the sauce as you go.
Cover the pot and simmer for 1.5 hour.
