Quinoa Chicken Patties

When dinner works across the board, we record it in the books of wins.


Very very rare occasion around here.


But these quinoa chicken patties made the cut. The quinoa not only adds nutrient, but also a different texture that makes the patties super fluffy!


A definite try.


And while you’re at it, make a batch of cilantro dressing. It NEVER disappoints and is the king of dips!!



quinoa patty


  • 1 lb ground chicken

  • 1 cup cooked quinoa

  • 1/2 cup breadcrumbs

  • 1/2 cup chopped cilantro / parsley

  • 1 egg

  • 1/2 lemon, juiced

  • 1 tbsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper



DIRECTIONS:


  1. In a mixing bowl, combine ingredients and mix.

  2. Heat an enamelled cast iron skillet at medium high heat. Add a very thin layer of oil to the pan.

  3. Roughly shape patties and place on hot oil. Don't overcrowd the pan. Work in batches.

  4. Sear until a crust forms then flip. Don't try to flip before or else the pattie might break.
