Rose sauce has to be my all time favorite pasta sauce! It used to take me much longer to make but this has been my new way for the past few months, and I am so happy with the results!
Note that I use frozen cubed garlic, parsley and fried onion to make the process faster, but you can use fresh!
2 frozen cubed garlic
2 frozen cubed parsley
2 frozen cubed fried onion
3 tbsp tomato paste
1/4 stick butter
1/4 cup water
1 tsp salt
1/2 tsp oregano
2 tbsp pasta water
235 ml heavy cream
450 g penne
1/4 cup parmesan, plus more to garnish
DIRECTIONS:
Bring a large pot of water to a boil and boil pasta according to package directions. Don't forget to salt your water. Reserve some pasta water. Don't wash your pasta once cooked.
Melt your butter in a small saucepan, add all frozen cubes and sauce until fragrant. Add tomato paste and let it caramelize with the rest. Add water.
Blend mixture using an immersion blender. You can use a tall container for easier blending.
Spice the sauce with salt and oregano. Add pasta water, heavy cream and parmesan. Mix until smooth.
Mix sauce in pasta. Serve and garnish with more parmesan.
