What’s better than a hot bowl of yummy soup for dinner when it's so cold outside? And, what’s better than an entire meal in one pot?? I know, nothing!
I am so used to making all kinds of orange soup for my kids just because they eat it. This time, I wanted to try something new.
Worst case, I can blend it to make “orange soup” and serve the chicken on the side. And of course that’s what happened. My eldest was willing to try it though and that's a win in my books.
But I got to eat it just like that and OH MAN was it amazing!! Kids don’t know what they’re missing. The pulled breast was so soft and full of flavour, and that broth was incredible!
Definitely a redo!
1 large onion, finely diced
4 celery stalks, finely chopped
3 carrots, finely chopped
3 potatoes, finely diced
1/2 of a butternut squash, finely chopped
1 garlic clove, minced
1/2 tsp paprika
1 tsp turmeric
1 tbsp salt
1/2 tsp black pepper
4 cups chicken broth
2-4 cups water (or more broth)
2 chicken breasts
A handful of cilantro, not chopped
1 bay leaf
DIRECTIONS:
Prepare all your veggies beforehand so the process goes smoothly (Always do so when making soup!).
Turn your instant pot on saute mode. Add a drizzle of oil and your onion. Saute until translucent.
Add carrots, celery and potatoes. Let the veggies sweat and develop some color. Add butternut squash and garlic and saute a little more.
Mix in paprika, turmeric, salt, pepper and chicken broth.
Give everything a good mix then add water (or more broth), cilantro (all together for easy removal), chicken breasts and bay leaf.
Close instant pot and pressure cook on high for 20 minutes.
When ready, release pressure.
Remove bay leaf and cilantro (i dont enjoy it in soup but love the flavor).
Remove breast. Using 2 forks, gently pull apart the chicken and return it to the soup, or set aside and add to bowls before serving.
**Note that if you don’t have an instant pot, you can use a regular pot and make the veggies sweat as said in the recipe. To cook, leave it on a low flame covered for at least 1 hour.
