Who’s ready for Taco Tuesday?
With a bonus PICKLED ONION recipe!
I have a great pulled chicken recipe for that one that takes minutes to put together and uses barely any ingredients.
It’s easy, filling and will make everyone happy!
2 chicken breasts
3 cups water
1/2 tsp salt
1/2 cup BBQ sauce
DIRECTIONS:
In a small pot, combine breast, water and salt. Boil on high for 13-15 minutes, until interior chicken temperature reaches 165 F.
Remove from water and shred using forks. Discard most of the water, saving only a few tbsp.
Return chicken to pot and add BBQ sauce. Return to the heat, at medium low for about 8 minutes.
Make your pickled onions, guac, or any topping of your choice and build your tacos!!
Pickled onions: (small jar)
1/2 red onion, sliced very thinly
1/4 cup apple cider vinegar
3/4 cup water
1 tbsp honey
1/2 tsp salt
Place onion in the jar. Top with salt. In a small saucepan, bring to a boil remaining ingredients. Pour onto onions and close lid.
