A salad that is really a side dish at the same time.
It's tangy, acidic, herby, filling. Just everything that would make your tastebuds explode.
5 medium size potatoes, peeled
1 cup corn
1/4 red onion, minced
1/2 jalapeno, minced
6-7 mini pickles, cut finely
1/2 cup dill leaves, chopped
1/2 lemon, juiced
2 tbsp mayo
1 tsp salt (or more, to taste)
1 tsp black pepper
1/2 tsp cumin
DIRECTIONS:
Start by boiling potatoes until a knife can run through it easily.
When potatoes cool, cube them. Add to a bowl.
Add all other ingredients. Mix to combine
