Post Fasting Omelet

While I always stuff my face after fasts with all the pastries and breads that are available , my husband is the smart one.


I have been making an omelet like that (or scrambled) for years now after every single fast. He loves how light it feels on his stomach. And I couldn’t agree more… I just have zero self control!!


Consider this not as a recipe but as an idea. You can decide to add/remove any vegetable. I’ve always added whatever I have on hand. Mushrooms, eggplant, shallots, leeks, herbs… really anything you like!




omelet



  • 2 zucchinis

  • 1 onion

  • 1 pepper

  • Handful of baby spinach

  • 3 tbsp oil

  • 6 eggs

  • Salt and pepper

  • Any herb spice blend



DIRECTIONS:


  1. Start by chopping all your vegetables. Heat a non stick pan to medium high heat. Add oil.

  2. Fry your onion first. You want to first cook the veggies that take the longest to cook. I did peppers then zucchini then spinach, while letting them cook for a few minutes in between. Lower heat to medium and place vegetables in a single layer.

  3. Whisk your eggs with salt, pepper and herb spice blend.

  4. Pour egg mixture on vegetables. Move sides for so the egg can cook.

  5. Once you can slide a spatula under and the omelet slide on its own on the pan, carefully slide onto a plate then flip the plate back into the pan to cook on the other side. Once fully cooked, remove.
