One of my favorite ways to cook is to use fresh seasonal ingredients and turning them into a dish. Leeks are all over now! And when cooked down they have such an amazing flavor! Cant wait for all of you to try this recipe!
3 large leeks, washed carefully and chopped
3 tbsp oil
12 chicken drumsticks
1 lemon, juiced
2 garlic cloves, minced
2 tbsp pomegranate syrup
1 green onion, finely chopped
1 tsp paprika
1/2 tsp sumac
Salt and pepper
DIRECTIONS:
Preheat oven to 350F. In a large pan, heat oil at medium high heat. Add leeks and let them release all their liquid. Once soft, reduce heat to medium low and continue cooking down to brown and caramelize.
Place half of the leeks at the bottom of a 9x13 baking dish. Place drumsticks on top and add remaining leeks on drumsticks.
Mix sauce ingredients (all remaining) in a small mixing bowl. Pour onto chicken. Move chicken around to make sure sauce goes everywhere.
Cover tightly and place in the oven for an hour. Uncover and bake for another 40-45 minutes, or until browning forms at the top.
