Here’s a super easy side dish / chol hamoed dinner that takes minutes of prep!
My mother always used to make it, because it's easy and kids love it.
Feel free to add other vegetables to it if you’d like!
1 large onion, diced
2 tbsp oil
4 russet potatoes, peeled and cubed
12 eggs
1/2 tbsp pink salt
1 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp black pepper
Your favorite herb mix
DIRECTIONS:
Start by preheating your oven at 350F.
Heat a pan over medium high heat and add oil. Saute onion in oil until brown. Transfer onion to a mixing bowl
Add diced potatoes, eggs and spices. Mix to combine.
Generously spray a 9” round pan with non stick. (The recipe will give you 2 pans)
Transfer mixture into pans. Bake uncovered for 40-45 minutes.
