One-Pot Roast

A one pot roast is always a good idea if you’re running low on prep time. This took 15 minutes to put together, and keep in mind that i was filming at the same time!!



all in one pot roast



  • 2.5 kg beef roast

  • 1 large onion, sliced

  • 3+2 tbsp oil

  • 1.5 lbs assorted mini potatoes

  • 1 large carrot, peeled and cut in chunks

  • 2 tbsp tomato paste

  • 2 tbsp honey

  • 1/2 cup dry red wine

  • 1 1/2 cup chicken broth

  • 1 tsp salt

  • 1 tsp pepper

  • 4 shallots

  • 5 cloves garlic

  • A few springs of thym



DIRECTIONS:


  1. Preheat oven to 275F. In a large dutch oven, place 3 tbsp of oil at the bottom then layer onion, salt and roast on top. Place potatoes and carrots around.

  2. In a small bowl combine tomato paste, 2 tbsp oil and honey. Spread on roast. Sprinkle salt and pepper. Add wine and broth.

  3. Place garlic and shallots around. Line sprigs of thym on roast.

  4. Cover and cook for 6-8 hours. Keep checking and basting your roast. Its ready when a knife can slide in with not much effort.
