One-pot Chicken Ramen with Edamame

When all 3 kids eat, we celebrate! It's a very rare occasion here so it deserves to be celebrated!


I needed some new dinner ideas that required only a few staple ingredients that are always available in my house. It's always good to have some of those so suppers can happen quicker. I choose to use only components that i know my kids like: ramen, chicken and edamame!

  • 5 boneless skinless chicken thighs, cleaned and cut in small pieces

  • 1/4 cup oil

  • 1 bag frozen edamame, thawed

  • 1 tbsp minced garlic (about 4 cloves)

  • 2 tbsp honey

  • 1 tsp dijon

  • 5 tbsp soy sauce, divided

  • 2 packages ramen noodles (without seasoning)



DIRECTIONS:


  1. Start by seasoning the chicken with salt and pepper.

  2. Heat a large pan at medium high heat. Once hot, add oil. Add chicken and saute until almost cooked through.

  3. Add edamame and saute until all water disappears and blistering starts to happen on both the chicken and the edamame. Dont mix too often to allow blistering to form.

  4. At that point, pour boiling water on ramen in a separate bowl to cook them through.

  5. Add garlic to pan and saute until fragrant. Add honey, dijon and 2 tbsp soy sauce. Mix until combined.

  6. Lower heat to simmer. Carefully transfer cooked ramen to the pan and mix them in. Add remaining soy sauce. Salt the dish as needed.
