One pot Chicken Casserole

Exhausted moms, I SEE YOU!


After a long day of work/ home making/ baby crying, I know that you only want to get that dinner done and not think about anything else. Let alone more dishes.


This one dish casserole comes together so fast, and is a FULL meal that feeds many in one single pot.


Don't like searing chicken? SKIP IT! Just add your chicken in at the end before closing up your pot and you will get beautiful results as well.

  • 4 chicken breasts, cut in strips

  • 1/4 cup neutral oil, such as avocado

  • 2 cups sliced leeks

  • 2 cups frozen peas

  • 1 tsp paprika

  • 1 tsp turmeric

  • 1/2 tsp black pepper

  • 1 tbsp pink salt

  • 1 cup raw basmati rice, washed

  • 2 cups water



DIRECTIONS:


  1. Start by heating a braiser at medium high heat. Only once it’s hot, add your oil (this helps create a non stick surface). Sear your chicken strips on both sides. Work in batches so you don’t overcrowd your pan. Only flip your chicken once they easily unstick from the surface.

  2. In the same hot braiser, add leeks and peas. Saute until soft and the leeks slightly caramelized. Lower heat to a simmer.

  3. Add in raw rice, salt, water, paprika, turmeric and black pepper. Return the chicken to your pot and cover.

  4. Turn the heat off after 10 minutes. Leave it covered for another 15-20 minutes. Open, fluff the rice, and dig in!



Note:

If you don’t sear your chicken at the beginning and opt for adding it at the end, follow all the steps then add raw chicken before closing the pot. Let it cook on a low heat for 20 minutes, then turn off and wait another 10-15 minutes to open the pot.
