2 kg Beef brisket, 2nd cut
1/4 cup oil
1 cup roasted and peeled chestnuts (such as 3 packs of @gefen_foods chestnuts)
2 heads of garlic, tip cut off
1 tsp salt
1 tsp pepper
1/2 cup pure maple syrup
1/2 cup water
Place your brisket in a large deep pot and pour oil on it. Scatter your chestnuts around. Place your heads of garlic on the sides.
Season with salt, pepper, pure maple syrup. Add water around the brisket.
Cover your pot. Place it on a medium high flame until it reaches a boil. Lower the heat to a simmer and let it cook for 3-3.5 hours, or until fork tender. Make sure you baste your brisket a few times throughout the cooking process.
If you want to slice it, wait for it to cool completely, preferably overnight in the fridge, then slice against the grain with a sharp knife.
