One Bowl, No mixer, Banana Chocolate Chip Muffins

ONE BOWL, NO MESS, NO MIXER - are all words that speak to me!


Those muffins are a great solution to help you use up those unwanted too-ripe-to-eat bananas that sat on your counter for who knows how long . They are moist, fresh and so yum paired with a good hot drink (coffee!!) that I know you will really enjoy!


The fact that they are made with butter makes them 10x more tasty and smooth. They have become one of my staple baking recipe and I'm sure it will be for you too!

Recipe yields 12 muffins



  • 2 ripe bananas, mashed

  • 1 egg

  • 1/4 cup butter, softened (or microwaved for 30 sec)

  • 1/4 cup oil

  • 1/4 cup milk

  • 1 1/2 cup flour

  • 2/3 cup sugar

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup chocolate chips (mini is better but not required)



DIRECTIONS:



  1. Preheat oven to 350 F. Line a muffin tin with 12 muffin liners.

  2. In a large mixing bowl, combine bananas, egg, butter, oil and milk. (If you like it more buttery, change the oil for butter). Add flour, sugar, baking powder and salt, then mix. Fold in chocolate chips.

  3. Fill your muffin liners halfway. Top with a sprinkle of sugar (and cinnamon- optional)

  4. Bake for 25-30 minutes, or until your toothpick comes out clean.



Note: to make them non dairy, replace butter for oil and milk for non dairy milk.
