Mémé’s Nut Cake

I remember this cake clearly from back in my grandmother’s house when I was a child. I actually never touched it back then because which child would intentionally choose this cake?!


Ask me today, and I would choose this over any heavy overly sweet cake.


I know so many of you know this cake. It’s a universal moroccan grandmother’s treat.

  • 6 eggs, separated

  • 1 1/4 cup sugar

  • 1/2 cup orange juice

  • 1/2 cup oil

  • 1 cup ground walnuts (1 heaping cup of raw walnuts)

  • 1 1/2 cup flour

  • 2 tsp baking soda

  • Walnuts, to top

  • Powdered sugar



DIRECTIONS:


  1. Preheat oven to 350.

  2. In the bowl of an electric mixer, beat egg whites with sugar at high speed until until white and creamy. Set aside in another bowl.

  3. Beat egg yolks until paler yellow then add orange juice and oil and beat until incorporated.

  4. Using a mini food processor, ground your nuts. Add to the mixer along with flour and baking soda. Beat until fully incorporated.

  5. Very slowly and patiently, fold in your whites into the thick batter.

  6. Spray a spring form pan with nonstick. Pour batter into it. Top with walnuts, or incorporate pieces of nuts in the batter.

  7. Bake for 45-50 minutes, or until a toothpick comes out clean.

  8. Once cool, top with powdered sugar.



Note: To ensure nuts stay on top (not like my display cake) toss nuts in flour.
