Mushroom quiche for the mushroom lovers out there!
So, I need to admit something here. I'm not the biggest fan of mushrooms. I know, I cook a ton with them! But i love the flavor it gives to food not so much their texture, and my husband loves to eat them, so it's a win win. Since I know exactly how to treat mushrooms in recipes and i know what to pair them with, I can totally say that this quiche was bomb
Bonus it comes together in minutes!!
1 frozen pie crust
4 cups assorted mushrooms, sliced (i used portobello and bella)
2 tbsp oil
1/2 onion, finely diced
2 green onions, chopped
1 garlic clove, minced
1/2 cup heavy cream
3 eggs
Salt and pepper, to taste
DIRECTIONS:
Preheat oven to 350 F. Poke holes in pie crust. Pre bake for 7 min. Set aside.
Heat oil in a non stick pan at medium high heat. Add onion. Saute until brown and translucent.
Add mushrooms and let them release all their moisture. Add garlic and green onion and saute until fragrant.
Transfer to a mixing bowl and let cool.
Add heavy cream, eggs, salt and pepper. Mix to incorporate.
Transfer to pie crust. Bake uncovered for 35 minutes, then broil for 3 minutes.
