Quiche is always a good idea. I can honestly have if for breakfast, lunch, or (and) dinner!
This one makes one of my favorite vegetable shine: Leeks! They are so underestimated. But really, when caramelized, the taste is incomparable to any other vegetable!
3 tbsp oil
1 onion, diced
1 clove garlic, minced
6 cups chopped leeks (about 1 very large one)
2 cups chopped assorted mushrooms
3/4 cup heavy cream
3 eggs
1/3 cup feta, shredded
1 tsp salt
1/2 tsp oregano
1/2 tsp black pepper
1 frozen pie dish
DIRECTIONS:
Preheat oven to 350 F.
Start by heating a large pan over medium high heat. Add oil. Saute onions until translucent and a few brown pieces start to form. Add garlic and saute only until fragrant.
Add leeks. Continuously stir to avoid the leeks from sticking to the pan.
Once leeks are soft, add mushrooms. Stir often until mushrooms released all their moisture and it evaporated.
Transfer to a large mixing bowl and let the mixture cool.
Meanwhile, poke holes in your pie dish and precook it for 8 min.
Once mixture has cooled, add heavy cream, eggs, spices and feta. Mix until combined and transfer everything to the pie dish.
Bake for 50-55 minutes, or until the middle has completely set.
