Moroccan Anis Cookies

I first saw these cookies made by Oshrit Abergil


In my opinion, they are the cookies that every home should have at all times just ready when you need them! They're the perfect afternoon/ post dinner/ morning coffee or tea snack. In fact, I have a jar right now sitting on my living room buffet!


The dough takes minutes to put together in a mixer, then just roll out, cut, bake and done! No shaping cookies, no million cookie sheets to rotate in the oven!

  • 4.5 cups flour

  • 1/2 cup + 2 tsp sugar

  • 1/2 cup coconut flakes

  • 1/2 cup sesame seeds

  • 1/2 cup anis seeds

  • 1 bag baking powder (about 10g)

  • 1 bag vanilla sugar (about 10g)

  • 2 eggs

  • 1 cup water

  • 3/4 cup oil




DIRECTIONS:



  1. Preheat oven to 350. Line two full size baking sheet with parchment paper.

  2. In a mixer fitted with the paddle attachment, combine all dry ingredients and mix. Then add wet ingredients. Mix until a soft dough forms. If it is too dry, add 1 tbsp of water at a time while mixer is running.

  3. Transfer dough to a parchment paper. Separate dough in half. Using another layer of parchment on top of your dough, roll out as thin as you can, about 1/2 cm. This will help roll out evenly.

  4. Remove top parchment. Using a fork, or poker roll, poke holes throughout. Then, cut dough in long strips. Transfer sheet to a baking sheet.

  5. Bake for 30-35 minutes.
