Some color to brighten up your day!!
I'm totally obsessed with asian flavors on roasted vegetables and you should be too!
1 bag frozen broccoli
1 bag medium pre peeled carrots
Cooking spray
Marinade:
1 tbsp dijon
2 tbsp maple syrup
3 tbsp soy sauce
1.5 tbsp miso
1/2 tsp sriracha
1/2 tsp garlic powder
Salt and pepper
DIRECTIONS:
Preheat oven to 400F.
Spray a full size baking sheet with non stick. Place all vegetables on a single layer.
Mix all marinade ingredients in a mixing bowl. Pour over vegetables and mix around using your hands. Spray vegetables with non stick.
Roast for 40-45 minutes, or until dark bits start to form.
