Miso Roasted Vegetables

I'm totally obsessed with asian flavors on roasted vegetables and you should be too!



roasted veggies



  • 1 bag frozen broccoli

  • 1 bag medium pre peeled carrots

  • Cooking spray


Marinade:


  • 1 tbsp dijon

  • 2 tbsp maple syrup

  • 3 tbsp soy sauce

  • 1.5 tbsp miso

  • 1/2 tsp sriracha

  • 1/2 tsp garlic powder

  • Salt and pepper



DIRECTIONS:


  1. Preheat oven to 400F.

  2. Spray a full size baking sheet with non stick. Place all vegetables on a single layer.

  3. Mix all marinade ingredients in a mixing bowl. Pour over vegetables and mix around using your hands. Spray vegetables with non stick.

  4. Roast for 40-45 minutes, or until dark bits start to form.
