I am not a side dish person! I love a good meat meal, but don't ask me to make side dishes because I find them boring and not even the star of the show anyway!
But when I do have to make side dishes, the first one that comes to my mind is green beans! I love love the crunchiness of this veggie and cannot get enough of them once I start eating! I recently made them as a combo with whole mushrooms seasoned with a miso dressing. All i can say is WOW.
1 kg green beans, roughly, both edges chopped off
10-15 whole mushrooms
2 tbsp oil
1/4 cup soy sauce
2 tbsp shiro miso
3 tbsp honey
1 tbsp dijon
1 tsp sriracha (optional)
1/2 tsp sesame oil
1/2 lemon, juiced
Garlic powder
Salt and pepper, to taste
Sesame seeds
DIRECTIONS:
Stat by blanching your green beans: In a pot, bring water to a rolling boil , add green beans for 3 minutes then drain.
In a wok, start by sautéing your mushrooms for a few minutes. Add in your green beans and add the seasoning. Make sure you add salt to taste.
Saute until sauce thickens and mushrooms soften.
Top with sesame seeds.
