Miso Carrots

Simple, last minute side dish for a meat/chicken/fish dish, prepared in minutes!


And I bought those medium size carrots from Costco in a pre-peeled pack which made it so time saving and convenient. Love finding products that make my life easier.


roasted carrots


  • 12-15 medium size carrots

  • 2 tbsp miso

  • 2 tbsp soy sauce

  • 2 tbsp maple syrup

  • 2 tbsp grapeseed oil

  • 1/2 lime, juiced

  • Black pepper



DIRECTIONS:


  1. Preheat oven to 400F. Line a baking sheet with parchment paper.

  2. Lay carrots on a single layer on a baking sheet.

  3. Whisk together marinade. Pour all over carrots and mix.

  4. Roast for 25 minutes or until golden.
