This all started when i obsessed over @nadiyajhussain strawberry shortcake cupcakes and how easy yet gorgeous they were.
I couldn't stop thinking about how yummy it would be in the form of a cheesecake (because let's be honest here, cheesecakes are basically always on my mind when Shavuot is around the corner).
So I tested, and they were insane!!! The strawberry inside is the perfect surprise element that adds juiciness and freshness. The white oreo “the shortcake part” is the best finishing touch for the perfect base and to support that unctuous cheesecake!
Best part is that they look complicated but they can be prepared in minutes!!
yields 18 cupcakes
Strawberry Buttercream (taken from @nadiyajhussain )
175g butter, room temp
350g icing sugar, sifted
100ml strawberry ice cream, melted
In the bowl of a mixer fitted with the whisk, combine butter and icing sugar. Mix until cream starts to form. Add ice cream. Whisk until smooth and creamy. Transfer to a piping bag (or large ziploc) and refrigerate until cheesecakes are ready.
Cheesecakes:
16 ounce cream cheese
1/2 cup sugar
1 tsp vanilla
2 large eggs, beaten
1/2 cup sour cream
1/4 tsp salt
18 white oreos
22 medium size strawberries
DIRECTIONS:
Preheat oven to 275F. Line muffin tin with cupcake liners. Place 1 oreo in each liner. Place strawberry, top side down, on the cookie.
In the bowl of a mixer fitted with a whisk, beat cream cheese until soft. Add in sugar slowly then vanilla.
While mixer is running, drizzle in eggs. Add sour cream and salt. Mix until everything is fully combined.
Crush 4 strawberries with a fork and fold them in the cheesecake batter.
Transfer batter in a piping bag (or ziploc bag) and pipe around each strawberry. Don't worry if the strawberry is sticking out, it will be covered with the buttercream.
Bake for 25 min. Cool completely in the refrigerator.
Once cooled, pipe buttercream on top and top with fresh strawberries or any topping you would like!
