Mini Pizza Rollups

I’ve been making these for years now since I first tasted them as a shabbat appetizer at my cousin’s house and they are always a crowd fave!!


These Pizza Rollups are so easy to make and can be customized to pretty much anything you want! I even added meat or cheese to them! Feel free to take them in the direction of your choice!

  • 1/2 cup green olives

  • 1/2 cup black olives

  • 1/2 cup canned mushrooms (or fresh)

  • 1 small onion, roughly chopped

  • 1 cup tomato sauce

  • 1 tsp sugar

  • 1/2 tsp garlic powder

  • 1/4 tsp oregano

  • Salt and pepper

  • Store bought rolled puff pastry (2.2 lb), cold



DIRECTIONS:



  1. Preheat oven to 350F.

  2. In the bowl of a mini processor, combine olives, mushrooms and onion. Pulse until smooth.

  3. Transfer to mixing bowl. Add tomato sauce and spices and mix. Set aside.

  4. Slightly flour a clean working surface. Cut cold puff pastry in two. You will be able to make two rolls with this. Roll out puff pastry as best as you can in a long rectangular shape.

  5. Spread out half of the sauce evenly throughout the dough. The other half is saved for the second roll. Start rolling carefully to form a long log.

  6. Slice about 1 inch thick slices and place lying down on a parchment lined baking sheet.

  7. Bake for 20-25 minutes or until golden top.
