Nothing beats a fresh brioche on a Friday afternoon (supposedly for Saturday breakfast, but who can resist?). The aroma it brings to my house is deeply nostalgic. We used to receive a brioche and homemade bread from my grandmother every single week for years.
I hope to pass on the same food memories to my kids so that, one day, they will long for the same aromas they had growing up!

2 tbsp yeast
1 1/4 cup sugar
2 cup of warm water
3 eggs (room temp is better)
3/4 cup of oil
1 cup orange juice (room temp - microwave for 30 seconds)
5 tbsp orange blossom water (add or remove according to how strong you like it)
1 tsp vanilla
9 cups of flour
Chocolate chips
Directions:
Start by mixing the yeast, sugar and water in the bowl of an electric mixer.
Add eggs, orange juice, orange blossom, oil, sugar and vanilla. Turn on the mixer and let everything get incorporated.
When ingredients are combined, add the flour and turn on the mixer for about 8-10 minutes. Turn off and let rest 1 minute.
Transfer to a large bowl, cover and let rest for 1 hour, or until double in size. The dough should be sticky but soft.
Lay down a handful of dough on sprayed surface and form a long oval shape. Use oil spray to help with the stickiness. Fill with about 1/4 cup of chocolate chips and roll. Place on lined baking sheet and cover. Repeat for all dough. It gives me around 9 brioche.
Let it rest for about 30 minutes.
Preheat oven at 350. Brush egg wash over each brioche and sprinkle with sugar. Bake for about 25 minutes, until the top browns.
