I have been dreaming about making this for so long, I could taste it in my mind!
There are literally no other words to describe this than dreamy!!!!
(Yields around 16 rolls)
Meat eggplants:
1 lb minced meat
1 cup cilantro, chopped
1 onion
2 garlic cloves
1 tsp oregano
1 tsp paprika
1 tsp salt
1 tsp sugar
1/2 tsp black pepper
2 eggplants
Non stick spray
Sauce:
2 tbsp oil
1 onion, diced
700 g crushed tomatoes
1 tsp salt
1/2 tsp oregano
1 tsp garlic
1 tsp sugar
1/2 tsp black pepper
2 tbsp oil
DIRECTIONS:
Start with your meat mixture: Process your onion and garlic together in a mini chopper. Add everything to a bowl with meat, cilantro and spices. Mix.
Slice your eggplant lengthwise in 1/4 inch slices. Heat up a non stick pan to medium heat. Spray with non stick. Fry your eggplants until slightly golden on both sides. You are not looking for them to be fully cooked. Spray pan in between each time. Set aside your eggplants.
Make your sauce: heat a large pot or braiser to medium high heat. Add oil and fry onions until soft and brownish. Lower the heat and add all other ingredients. Simmer the sauce.
Stuff your eggplants: layer a thin layer of meat mixture on your eggplant slice. Carefully roll it up and place in the sauce. Repeat for all.
Cover the pot and simmer on a low flame for 1 hour.
