Comfort at its best!
The typical meal to warm you up when it is cold outside.
I love making this on Friday morning and enjoying it still hot on Friday night. It’s easy to put together and you can just forget about it for hours and let it do its thing.
I am used to make this in an instant pot, but I made it this way for all of you that don’t own one yet.
1 lb beef cubes
1 tbsp flour
1/2 tsp + 1 tbsp salt
1/4 cup oil
1 onion, sliced
3 potatoes, peeled and cubed
4 carrots, peeled and diced
1 sweet potato, peeled and cubed
1/2 butternut squash, peeled and cubed
2 tsp paprika
1 tsp cumin
1 tsp garlic powder
1/2 tbsp consommé (optional)
5 cups water/broth
2 bay leaves
DIRECTIONS:
Start by tossing your beef cubes in flour and 1/2 tsp salt.
Using a large dutch oven, heat up oil at medium high heat. Sear meat cubes in oil. Remove and set aside.
Add onion to your hot dutch oven. Saute until soft. Add all other vegetables and spices. Mix and saute for a few minutes.
Return meat to pot. Add water and bay leaves. Let the mix come to a boil, then reduce heat to a simmer and cover the pot.
Let it cook slowly for 4-4.5 hours.
