My mom has been making a variation of this cake for as long as I can remember for shabbat, and she, as well as me, does not usually bake! This particular version comes from her friend.
The selling point to me is definitely the ONE-BOWL addition. I love that I can make yummy homemade treats for my family while not creating a whole mess in the background, because really who enjoys cleaning up?!
1 cup neutral oil
1.5 cup sugar
4 large eggs
2 tsp vanilla extract
3 cups flour
4 tsp baking powder
1/2 tsp salt
3/4 cup orange juice (or milk if you want to make it dairy)
1 tbsp cocoa powder (optional)
DIRECTIONS:
Preheat oven to 325 F. Coat a bundt pan with a layer of flour then a generous amount of non stick cooking spray.
In the bowl of an electric mixer, combine oil, sugar, eggs, orange juice and vanilla. Mix for about a minute.
Add all other ingredients and mix at medium speed for about 2 minutes.
Pour half the batter in your bundt pan. If you are not adding the cocoa, you can pour everything.
Mix your cocoa to the remaining batter. Add it to the bundt pan. Using a knife, create a marbling with the chocolate part and regular part.
Bake for 55 min-1h, or until a toothpick comes out clean.
