Lemony Chicken Thighs and Potatoes

These days I’m all about healthy quick dinners that my family will eat and enjoy.


This one can be thrown together in minutes and can feed many hungry kiddos



9x13 chicken and potatoes


  • 5 boneless, skinless chicken thighs, cut in strips

  • 7-8 potatoes, cubed

  • 2 shallots, sliced

  • 1/2 preserved lemon, minced

  • 4-5 garlic cloves, sliced

  • 1 cup cilantro, minced

  • 1/2 cup sliced kalamata olives

  • 3 tbsp avocado oil

  • 1 tbsp paprika

  • 1 tsp black pepper

  • 1 tsp salt

  • 1 cup water or broth



DIRECTIONS:


  1. Preheat oven to 350 F.

  2. In a large baking dish, throw together all ingredients. Using your hand or a mixing spoon, mix everything very well together and spread everything out in a single layer.

  3. Cover tightly with foil. Bake for 40 minutes then uncover and bake an additional 20 minutes.



Note that you can swap the thighs for drumsticks! Just adjust the oven time to 1h covered and 20 minutes uncovered!
