Lemon Vanilla Bean Bundt Cake

Oh how many times I failed that one...


I'm so not made for baking but when i get my head into something, my stubbornness just won't give up!


Similar to my other bundt cake, with a few tweaks.


So finally here it is…



sponge cake lemon vanilla


  • 1 cup neutral oil

  • 1 cup sugar

  • 4 large eggs

  • 1 vanilla bean, scraped inside to get the paste

  • 2 lemons, zested

  • 3 cups flour

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 1 cup orange juice



DIRECTIONS:


  1. Preheat oven to 325 F.

  2. In the bowl of an electric mixer, combine oil, sugar, eggs, vanilla bean paste and zest. Mix using the whisk.

  3. Add flour, baking powder, salt and orange juice. Mix until batter is smooth.

  4. Flour the surface of a bundt pan, removing excess. Spray non stick on it. Pour batter into bundt pan.

  5. Bake for 55 min - 1 hour.
