A plain lasagna turned into a cute single portion to serve for Shavuot!
This is super easy to make and looks much better than regular lasagna when served.
Fill it literally however you like!
(Makes one 9x13 pan)
1 onion, finely diced
1 bag frozen chopped spinach
2 cups diced mushroom
475g ricotta
1/4 tsp oregano
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 egg
1 box lasagna
1 jar marinara
About 2 cup shredded mozzarella
DIRECTIONS:
Preheat oven to 350 F.
Start by frying your onion in a pan. Once brown, add spinach and mix until almost all water is evaporated.
Simultaneously, boil lasagna al dente. Drain and set aside.
Add mushroom to spinach and fry until no more moisture remains. Set aside in a bowl to cool.
Once cooled, add egg, ricotta, oregano, salt, pepper, garlic powder.
Prepare a 9x13 baking dish with marinara at the bottom.
Lay your lasagna pasta and spread a layer of marinara then the spinach mixture. You can add shredded cheese on it too.
Roll each lasagna and place in the baking dish. Cover with marinara and top with about 1 cup (or more) of shredded cheese.
Bake for 45 minutes covered then uncovered for 10-15 minutes.
