Kebabs
1 lb minced beef
1 handful of cilantro
1 clove garlic
1 shallot
1 tsp paprika
1/2 tsp cumin
A few squeezes of lemon
Salt and pepper
Skewers (wood or metal)
DIRECTIONS:
Preheat oven to 400F. Line a 1/2 size baking sheet with foil then place a rack on top. This will help prevent the kebabs from bathing in their own fat while cooking (usually results in soggy meat).
In a mini food processor, combine cilantro, garlic and shallot. Process until completely minced.
In a mixing bowl, add meat, spices and cilantro mixture. Mix only until everything is combined.
Start forming the meat around the skewers and placing on the rack. If you have no more skewers, just form the meat in that same shape and place on the rack.
Bake for 15 minutes.
Israeli Rotev:
4 tbsp tomato paste
4 tbsp mayo
1 garlic clove
1/2 tsp sugar
1 tbsp oil
1/4 tsp each oregano, cumin, black pepper, salt
Combine all ingredients in a blender and blend until smooth.
