Often times the best recipes happen when you least expect it, and when you have the least amount of ingredients on hand.
This time it happened for shabbat fish. I wanted something different. Not moroccan but still yummy. So I opened my fridge and let my hands pick out the flavours!
It came out so good. So fresh. Totally worth trying!
3 salmon slices
1/2 cup kalamata olives, chopped
1/2 cup parsley, finely chopped
2 cloves garlic, minced
1/2 tsp Salt
1/2 tsp black pepper
1/2 tsp sumac
1 tsp zaatar
1/2 lemon, juiced and zested
3 tbsp olive oil
DIRECTIONS:
Start by preheating your oven at 425 F.
On a 1/4 size sheet pan, combine all your ingredients besides for the fish. Mix to incorporate.
Place salmon on the pan and rub mixture all over it.
Bake for 15 minutes (If you’re planning on making a filet, bake an additional 3 minutes).
