Jeweled Rice

For all you people out there tired of plain old rice…


The most beautiful rice dish to serve alongside any protein. For me, it’s the colors! After all, we do eat with our eyes first!

  • 3 tbsp avocado oil (or neutral oil)

  • 1 cup soup noodles

  • 1.5 cup basmati rice, washed

  • 1 carrot, peeled and grated

  • 1/2 tsp granulated garlic

  • 1/2 tsp black pepper

  • 2 tsp salt

  • 3 cups water

  • 1/4 cup dried cranberries

  • 2 tbsp pine nuts

  • 1/4 cup cilantro, chopped

  • 1 tbsp mint, chopped



DIRECTIONS:


  1. Heat a large pan to medium high heat. Add oil. When oil is hot, add your soup noodles and mix them to get them a toast. You need them to get a dark brown color.

  2. Mix in your rice and shredded carrot. Add in water and spices. Let it come to a slow boil.

  3. Reduce heat to a simmer and cover the pot. After 5 minutes, turn off the heat and let your dish soak up the residual heat for an extra 15 minutes.

  4. Uncover and fluff the rice using a fork. Add cranberries, cilantro, mint and pine nuts and continue stirring with your fork.
