Instant Pot Miso Orange Soup

Soup season is definitely upon us!


Orange soup is one of my favorite to serve to my kids since it's packed with nutrients (plus my kids are not big on eating vegetables that they can see). I always tweak it depending on what I have and it always comes out super yum as long as I make sure to balance the flavors correctly.


I decided to post this one because I find that the seasoning was particularly yummy and sooo flavorful.

  • 1 tbsp oil

  • 1 onion, cubed

  • 3 garlic cloves, sliced

  • 4 carrots, sliced

  • 1/2 butternut squash, cubed

  • 2 sweet potatoes, cubed

  • 1 tomato, cubed

  • 1 zucchini, cubed

  • 1 tbsp maple syrup

  • 2 tbsp white miso

  • 1/4 cup dry red wine

  • 1 tsp turmeric

  • Salt and pepper

  • 1/2 cup belsoy cooking cream



DIRECTIONS:


  1. Heat oil on saute mode of your Instant pot. Add onion and garlic and saute until translucent.

  2. Add carrots and continue sautéing for a few minutes.

  3. Add sweet potatoes, squash, tomato and zucchini and let the vegetables sweat.

  4. Mix in wine, miso, maple syrup, salt, pepper, turmeric.

  5. Add water until everything is covered.

  6. Program you instant pot to high pressure for 25 minutes.

  7. Once its done, release pressure. Blend with a hand blender and add belsoy for some added creaminess.


You can definitely make this soup in a regular pot and saute everything like mentioned before boiling up!
