Dinner can sometimes be stressful! There are days where i praise my instant pot for doing the job for me. I can't imagine what my dinner life would be without it!
For the stew:
5 carrots
5 celery sticks
1 onion
1 large sweet potato
2 zucchinis
2 tbsp oil
1 cup tomato sauce
5 cups chicken broth
1/2 lemon, juiced
1 tsp garlic powder
1/2 tsp oregano
1 tsp sugar
1 bay leaf
Salt and pepper
Chopped cilantro (optional but recommended)
For the meatballs:
1 lb minced meat
1 egg
1/4 cup breadcrumbs
2 tbsp water
1 tsp paprika
1 tsp garlic powder
1/2 tsp cumin
Salt and pepper
DIRECTIONS:
Start by peeling and dicing all your veggies (i just keep the peel of the zucchini). Turn your instant pot to saute mode. Add oil.
Start by sauteing your onion, celery and carrot. Once sweating, add in sweet potato and zucchini. Saute everything for a few minutes.
Add in tomato sauce, broth, lemon and spices. Leave it on the saute mode to keep it hot. This helps pressure go up faster.
In a mixing bowl, combine all the meatball ingredients. Form balls and gradually add them in the hot stew.
Close your instant pot and pressure cook for 35 minutes. Once done, release pressure and add chopped cilantro.
